Research and development. That’s where it all begins. But unlike traditional R&D in some sterile manufacturing plant laboratory one might imagine, the Paesana process begins in the fields of the Italian countryside. “We travel back and forth quite a bit,” says Paesana President Louis Scaramelli IV. “We source most of our ingredients and 100% of the tomatoes we use are from the same region in Italy that our great-grandparents did. That’s probably the most distinct and important part of the process.”

Every sauce produced by the Scaramelli family — whether in conjunction with a premium partner brand utilizing their white label services or a passion project that the family will bring to market — starts with a conversation. The team of food engineers and the owners of Paesana discuss exactly what a brand is seeking to accomplish and how it will ultimately taste or “perform” (as the Scaramelli’s like to say) when it’s on the dinner table. Certain ingredients take center stage and really come forward in a blend and consistency is key.

The Paesana manufacturing plant adheres to the strictest of standards and guidelines set forth by the FDA and the USDA. The family prides itself on having implemented the most robust and technologically advanced plant in the nation. “Our clients are always surprised and impressed by the plant,” says Lou. “We have invested heavily over the past couple of decades into our technology and the result is that we have the most advanced systems and processes anywhere.”

One of the secrets to Paesana’s success (at least one that they’re willing to share) is that the ingredients are whole until the moment they are sliced and mixed and formulated in the plant. This ensures that the ingredients maintain the highest level of flavor and integrity possible. It’s why their sauces pack such a punch when served in the home. Most manufacturers would never consider such intense guidelines when formulating a sauce because it’s expensive and very difficult to implement. It’s just one of the reasons that Paesana brand and their clients’ brands are recognized for such high quality year after year.
