Paesana White Pizza with Truffle and Arugula

INGREDIENTS:
- 1 pizza dough
- 1-lb mixed mushrooms
- ¼ teaspoon thyme
- 1 tablespoon olive oil
- ¼ red onion, thinly sliced
- 1 jar Paesana White Pizza Sauce
- 1 cup shredded mozzarella cheese
- 1 tablespoon truffle oil
- Handful of Arugula

In a skillet over medium heat, heat the olive oil, mushrooms, red onion, and thyme. Cook for about 5 to 7 minutes, or until they begin to brown.

Stretch the pizza dough into a 12-inch circle.

Bake the pizza: when the oven is ready, spread ½ cup of Paesana White Sauce on the pizza dough, leaving a ½-inch crust. Top with the sauteed mushrooms and onion, and sprinkle with mozzarella.

Use a pastry brush to brush a layer of oil onto the crust.

Bake until the cheese has melted and the crust is golden, about 15 to 20 minutes. Top with a handful of arugula and a drizzle of truffle oil and black pepper.

Remove the feta and tomato mixture from the oven and mix to combine, creating a creamy sauce. Thin with reserved pasta water, as needed. Transfer the cooked pasta to the baking dish, stirring to coat.
