INGREDIENTS:
- 1, 12oz jar Paesana Marinated Artichoke Hearts, drained
- 1 cup roasted red peppers, drained roughly chopped
- 1, 14oz can chickpeas, drained and rinsed
- 1-pint cherry tomatoes, halved
- ¼ red onion, thinly sliced
- ½ cup fresh basil leaves, torn
- 2 tablespoons pine nuts, toasted
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon Gold’s Dijon Mustard
- ½ teaspoon Italian seasoning blend
- Salt and pepper

In a large bowl, combine the Paesana Marinated Artichoke Hearts, peppers, chickpeas, tomatoes, red onion, basil, and pine nuts. Toss to combine.

In a small bowl, whisk together the red wine vinegar, olive oil, Gold’s Dijon Mustard, and Italian seasoning blend. Season with salt and pepper, to taste.

Toss the salad with the dressing.
